What's the deal with gluten sensitivity?

Gluten sensitive vs. Celiac Disease - what does it mean and how many people are affected?

A recent study showed that people who thought they were Non-Celiac gluten sensitive were actually reacting to other dietary triggers: FODMAP.

To put this into context let’s break down the numbers as they relate to gluten: - Celiac Disease, estimated 1% of the US population (~3M people) - Non Celiac Gluten Sensitivity(NCGS), previously estimated 6% of the US population (~18M)

Hard to diagnose. There is a no existing biomarker for NCGS sensitivity, which makes it extremely difficult to diagnose. Dr. Peter Gibson was the first to provide clinical data to support the existence of NCGS and his recent study potentially negates the finding. “In contrast to our first study…we could find absolutely no specific response to gluten.”

“Much, much more research is needed.” It’s difficult to draw sweeping conclusions from this study but what’s clear is that more research is needed to figure out the underlying cause of unknown intestinal issues that are affecting millions.

The beginnings

Eating socially should be about fun, family, friends, and food. For millions of people in the US (and worldwide) who have food intolerances and allergies, the simple act of eating out or in an unfamiliar environment is the cause of much anxiety.

The beginnings of 6Sensor were born out of the personal needs of the founders. Both Shireen and Scott had food allergies and sensitivites and were tired of perpetually feeling sub-par from unintended exposure to certain foods.

They had a vision to rapidly test food for allergens that could trigger really nasty responses in people, including gluten, dairy, peanuts and more. The goal was to bring back the joy of eating socially and to have more control over what you are putting in your body.

The gluten sensor was born over the summer of 2013 and since then they have grown their team and have been racing tirelessly to get this product on the market.
